Instructions
Grate all the vegetables and squeeze out the excess liquid using a cheesecloth or clean kitchen towel. Keep the liquid — you’ll use it!
Sieve the chickpea flour to avoid lumps, then mix it with the vegetable liquid (plus extra water or broth if needed). Stir until smooth.
Add the grated vegetables into the batter and mix well.
Heat oil or vegan butter in a pan over medium-high heat. Fry for 4–5 minutes on each side until golden and crispy.
