Vegan Baked Oat & Pistachio Fruit Bars (No Added Sugar, Toddler & BLW Friendly)
Toddler-Friendly & BLW
Easy vegan baked oat bars with pistachio butter, sesame and chia, banana, mango and freeze-dried blueberries. No added sugar, plant-based protein, omega-3 and a source of calcium. A wholesome BLW-friendly toddler snack ready in 25 minutes.

Samuel has been eating the same breakfast since he was six months old: porridge with banana. Every single morning. He loves it.
But every now and then, he refuses. Just like that, no warning, no reason. So one morning, after the third refused bowl that week, I started looking for alternatives. Something I could pre-bake the night before, hand him in the morning, and call breakfast.
These oat bars seemed perfect on paper. Pistachio butter for protein, fruit for sweetness, oats for fibre. I was so pleased with myself.
And he refused them.
I tried again the next morning. Refused. And again. Refused. I froze the rest of the batch, defrosted some a couple of weeks later for one more try, and… forgot about them in the morning rush.
So I gave them to him in the afternoon instead.
And look at him. He loved them. Demolished one, asked for another, smiled the whole way through.
The next morning I tried again. Refused.
So I learned something I want to share with you: it is not just texture, temperature or colour. The time of day matters too. For Samuel, breakfast is for porridge and only porridge. But the afternoon? The afternoon is for these bars.
They have become our go-to afternoon snack. I love taking them to the playground when he gets a bit hungry late in the morning. He has even accepted them as a second breakfast a few times. Just never as the first one. How fun.
So if your little one is rejecting something you are sure they will love, try it again later in the day. You might be surprised.
Why This Recipe Is Great For Toddler Nutrition
These bars are quietly packed with the things little ones need most in the toddler years: plant protein, fibre, healthy fats, omega-3 and calcium, all without any added sugar.
The pistachio butter does a lot of the heavy lifting here. Pistachios are one of the most protein-rich nuts and they bring healthy fats that make these bars genuinely filling, not just a quick sugar hit.
Combined with chia and flaxseed, every bar carries a generous dose of plant-based omega-3 (ALA), an essential fatty acid for toddler brain and nervous system development.
And here is the part I am genuinely proud of: every square delivers a meaningful dose of calcium. Whole sesame seeds, fortified soy yogurt, fortified oat milk, chia and pistachios all add up to enough calcium per 100 g to qualify these bars as a source of calcium under EU labelling rules. That matters on a plant-based diet where calcium is one of the nutrients to keep an eye on.
Tip: serve with a small portion of fresh fruit on the side for extra vitamin C and a bit of variety.

Ingredients
Rolled oats
The base of the bars. They provide sustained energy, fibre and beta-glucan, a soluble fibre that supports healthy digestion. Use certified gluten-free oats if needed.
Ripe banana & grated apple
These do all the sweetening. The riper the banana, the sweeter the bars. Grated apple adds moisture and natural pectin which helps the bars hold together beautifully.
Mango & freeze-dried blueberries
Mango brings tropical sweetness and lovely colour. Freeze-dried blueberries are a brilliant toddler ingredient: concentrated antioxidant power and a jewel-like finish on top, without making the batter wet.
Pistachio butter
The hero ingredient. Look for 100% pistachios with no added salt, sugar or oil. It is one of the most protein-rich nut butters, adds healthy fats, and gives the batter a subtle green tint that pairs beautifully with mango and banana.
Flax eggs & chia seeds
Flax eggs (ground flaxseed mixed with water) act as the egg replacer and binder. Together with a generous dose of chia, they bring significant omega-3, fibre and calcium, key nutrients for toddler brain and gut development.
Whole sesame seeds
The little calcium powerhouse. Whole (unhulled) sesame seeds carry close to 1000 mg of calcium per 100 g, plus a meaningful dose of iron. Use unhulled (beige or tan) seeds rather than the polished white hulled ones, which lose most of their calcium during processing. Stirred straight into the batter so they are safe for little ones.
Fortified soy yogurt & oat milk
Plain unsweetened fortified soy yogurt (e.g. Alpro Plain) brings creaminess, plant protein and a solid hit of calcium. Fortified oat milk doubles down on the calcium and keeps everything moist with a gentle natural sweetness.
Why Pistachio Butter And Not Almond Or Peanut?
You can absolutely swap pistachio butter for almond or cashew butter, but pistachio is genuinely worth seeking out. It is higher in protein than almond butter, has a more delicate flavour that lets the fruit shine, and that subtle green colour makes the bars look gorgeous. Always choose 100% pistachio with no added salt, sugar or oil.
How To Make Vegan Baked Oat & Pistachio Fruit Bars
1. Make the flax eggs
Combine 14 g ground flaxseed with 90 ml water. Stir well and set aside for 10 minutes until thick and gel-like. This is your egg replacer and binder.
2. Preheat & prep the tray
Preheat your oven to 180°C. Grease a rimmed baking tray (around 25×35 cm; a Swiss roll tin works perfectly) with coconut oil and line generously with baking paper. Thinner layers can stick more easily, so do not skip the paper.
3. Mix the wet ingredients
In a large bowl, mash 2 ripe bananas until very smooth. Whisk in the flax eggs, oat milk, soy yogurt, vanilla extract and pistachio butter until fully combined.
4. Add the dry ingredients
Stir in the rolled oats, baking powder, cinnamon, chia seeds, sesame seeds and the extra ground flaxseed. Mix until everything is evenly coated, then let it sit for 5 minutes so the oats and chia absorb the liquid and the batter firms up slightly.
5. Fold in the fruit & fill the tray
Fold in the grated apple, half of the mango and half of the freeze-dried blueberries. Pour onto the prepared tray and spread evenly with a spatula to about 1–1.5 cm thickness.
6. Top with fruit
Scatter the remaining mango and freeze-dried blueberries over the top, pressing them lightly into the surface so they stay in place during baking.

7. Bake
Bake for 20–25 minutes until the edges are golden and the centre is fully set. A toothpick inserted in the middle should come out clean. Start checking at 20 minutes; thinner layers bake fast and can overbake quickly.
8. Cool & slice
Cool on the tray for 10 minutes. Slice into bars or squares. For your toddler, aim for roughly 3×3 cm pieces, easy to grip and with those lovely soft-set centres.

Variations
- Swap pistachio butter for almond or cashew butter if you cannot find it
- Use raspberries or strawberries instead of blueberries for a different fruit combination
- Add a tablespoon of hemp seeds for extra omega-3
- Swap mango for peach or pear for a seasonal variation
- Add a handful of desiccated coconut for extra texture and flavour
Tips For Toddlers
- Aim for roughly 3×3 cm pieces: small enough to hold easily, firm enough not to crumble in little hands.
- Try them in the afternoon. Seriously. If your little one rejects a new snack at breakfast, try the same snack again later in the day. Time of day really does change how toddlers respond to new foods.
- Pack them in a small container for the playground or a long walk. They travel beautifully and need no heating.
- Let your toddler help. Mashing bananas and scattering fruit on top is a great kitchen activity that ends with something delicious.
- For babies just starting solids, omit the freeze-dried blueberries on top (they can be a choking hazard whole) and slice into longer finger-sized strips for easier grip.

Storage
Refrigerator
Store in an airtight container for up to 4 days. The bars firm up further as they cool, which is great for lunchboxes straight from the fridge.
Freezer
These freeze brilliantly. Cut into bars first, freeze on a tray until solid, then bag up individually. Defrost at room temperature or overnight in the fridge. Keeps for up to 3 months.
Serve With
- A small portion of plain soy yogurt for dipping
- Fresh fruit slices on the side
- A cup of warm oat milk for a cosy snack
- As part of a balanced toddler lunchbox alongside soft veg and a protein source
- Or pair with my Banana Oat Blender Muffins for a relaxed weekend snack platter.
Frequently Asked Questions
Are these bars suitable for babies?
Yes, these bars are great for baby-led weaning from around 6 months, as long as you are happy introducing oats, tree nuts, sesame and seeds. They contain no added salt or sugar. Cut into thin finger-sized pieces appropriate for your baby’s age, omit any whole freeze-dried blueberries on top (which can be a choking risk), and always supervise while eating. Sesame and pistachio are both common allergens, so introduce them in small amounts the first time and watch for any reaction.
Why whole sesame seeds and not hulled?
Whole (unhulled) sesame seeds carry far more calcium than the polished white hulled ones, almost 1000 mg per 100 g compared to about 60 mg. They are usually beige or tan and have a slightly chewier bite. Most health-food shops and Middle Eastern grocers stock them. The flavour is gently nutty and pairs beautifully with pistachio.
Can I use a different nut butter?
Absolutely. Almond butter, cashew butter or sunflower seed butter (for a nut-free option) all work well. Just make sure it is 100% nuts or seeds with no added salt, sugar or oil.
Why a rimmed tray instead of a deep dish?
The thinner bake gives a firmer bar that holds together really well in little hands. A deep dish gives you a softer, thicker bar that crumbles more easily. Both work, but the rimmed tray is what makes these so brilliant for self-feeding.
Can I leave out the flax eggs?
The flax eggs are important for binding. Without them the bars may not hold together as well. If you do not have ground flaxseed, try 2 tbsp of chia seeds mixed with 6 tbsp of water instead, rested for 10 minutes until gel-like.
Can I use frozen mango?
Yes, just defrost fully and pat dry before using, otherwise the extra moisture can affect the texture. Fresh mango is ideal but frozen works well too.
Why won’t my toddler eat them in the morning?
Honestly? Sometimes toddlers just have very specific ideas about what belongs to which time of day. Samuel will only eat these in the afternoon, never at breakfast. If yours rejects them in the morning, try again as an afternoon snack. You may be surprised. It is not always about the food itself.
